Because the hulls would turn the nuts red. But, the real reason pistachios were red is because they were dyed. The pistachio importers would dye them red and sometimes green, because of bruises and staining. Pistachios used to be harvested by hand which would cause an increased amount of staining and bruising on the pistachios. When importers would notice the blemishes, they would have the nuts dyed to make them look more appealing and to get rid of the blemishes. Pistachios are harvested by machines today, so the number of blemishes has decreased a large amount.
